Underwood admits to some less than healthy habits in her youth, including starving herself, rabidly avoiding carbs and taking the now-banned diet drug Ephedra. These days, she follows a vegan diet, or as she says a ‘wannabe vegan’ because she does eat eggs from the chickens on her Nashville farm. She stopped eating meat at age 13 because the idea of eating one of her own animals was too upsetting to her. She measures her macros and gets about half of her calories from wholesome carbs such as vegetables, green smoothies and pasta. The other half is split between healthy fats such as avocados and plant-based protein such as soy. She drinks a lot of water each day.

Underwood trains at least 6 days a week for up to 2 hours at a clip. She usually works out in the late morning, after the kids go to school or play group, and she’ll do a mix of cardio, circuits and weight training.
